The key takeaway? Producing anemone has much more risk and less profit potential in the field than the high tunnel. Our best-yielding option in the field (pre-sprouting, planting in November, and insulating with straw mulch) resulted in net returns of $0.50 per square foot when selling wholesale, compared to $3.50 per square foot in the high tunnel. Profitability was particularly influenced by labor costs - too much time spent weeding, harvesting, and bunching stems seriously cut into profit margins. We recommend growing anemone in the field if cutting time in these areas is possible, and selling on non-wholesale markets.
